Shape, texture and pairings

The wavy edges add movement and surface area, creating a contrast between the centre of the ribbon and its curled borders.

It works especially well with tomato, cheese and full-flavoured sauces. The right sauce can make the most of the pasta surface and the way this shape carries seasoning.
